I’ve had to get a little creative, all while keeping it simple with these 12 foods. I got some of these almond butter packets to keep in my car in case of a hunger emergency. This is a real thing. I go from my sweet self to raging ax murderer on prednisone within a matter of minutes. This is one of the only brands that don’t have added sugar, organic cane syrup (sugar), or extra salt. You really don’t need any of that. Almonds are great just ground up!
I do feel a little of that same serene feeling that I felt when I wore only 12 items of clothes in June. It is almost liberating to have only these choices. Almost. Not liberating enough to keep this up for longer than a month.
This was my favorite of the week! Leafy greens, with tomatoes, shredded cheddar and 2 fried eggs from my chickens on top! The egg yolk served as a “dressing”. (dressing is one thing I really miss this month!)
I have been mashing some cauliflower this week, and it is awesome. I’ve had with cheese and bacon and it tastes like a loaded baked potato. I would like to point out that this is not my bowl of mashed cauliflower. My photograph looked really funky and babyfoodish. (even though it tasted amazing!)
Every weekend before grocery shopping, I ask my kids what they want for dinner that next week. Almost every week one of them wants BLTs. Especially in the summer. It is such an easy meal…I just add some fruit and we are good to go. I was not feeling another salad, so I used the romaine as a big wrap for my bacon, tomatoes, and cheese.
Chick Fil A. Grilled nuggets. And I packed my own avocado.
This was one of those things I made for breakfast that wasn’t very breakfasty, but was really satisfying. Toasted almonds and spinach in an olive oil coated pan. Delish!
I would like to point out again, that I am so happy that coffee doesn’t count. (this is iced coffee, unsweetened, with a splash of heavy cream…they keep that liquid gold behind the counter. You gotta ask for it.) And I love gel nails. It has been over a week, and my nails still look amazing. I normally chip my polish on the door on the way of the nail salon because who has an entire hour to let your nails dry?
Coffee and gel nails for life. Put that on my coffin.
