Bacon Wrapped Meatloaf

Holy Moly.  This recipe took me from wife of the year, to wife of the freaking decade.  I am wondering what I need to wrap in bacon to become wife of the century?

Bacon Wrapped Meatloaf

Ingredients:

  • 1 pound of ground beef
  • 14-18 pieces of bacon-I used center cut, but wished I hadn’t, since the regular sliced is longer
  • 1 cup of almond meal
  • 1 cup of sharp cheddar cheese
  • 1 egg
  • 1 tsp Worcestershire sauce
  • squirt of Dijon mustard.  (the recipe called for mustard powder, so I had to improvise)
  • salt and pepper

Step One:  Weave the bacon.

Step Two:  Place the meatloaf pan upside down on top of the bacon weave, then flip it.

Step Three:  Mix all the other ingredients, except the cheese.  (you could add peppers, mushrooms, or diced celery to this)  Yes, I realize there are two flecks of cheese in the bowl.  I was really excited and didn’t read the directions.

Step Four:  Put the meatloaf mix in the bacon weave topped loaf pan.  I layered my meat and the cheese, and it was awesome, so do it that way.  Fold the bacon over, so it covers the meat/cheese mix.  I put and extra strip down the middle so it looked pretty.

Step Five:  Wrap it in foil and stick it in the fridge for 30 minutes.  I put this picture in here because people always want to know what is in your fridge.  Water, Organic Milk, whipping cream, eggs, cucumbers, protein shakes, pre-portioned veggies and dip, pimento cheese, cherries, and cans of sparkling water.

Step Six:  Preheat the oven to 300 degrees.  Take the meatloaf out of the fridge, remove the foil, and flip it onto a broiler pan.  Cook for 1 hour.  After an hour, crank the oven up to 350 degrees, and cook for 10 more minutes.

Step Seven:  Take it out of the oven, and let it sit for about 10 minutes before you slice it.  Then devour it!  I know this is not the prettiest looking thing, but trust me…it is delicious!  I will perfect my weaving skills in future recipes!

Getting Beach Ready!

I remember being very anxious about going on our annual beach trip in years past.  (I was actually very anxious about everything.  I was even anxious about getting anxious)  There was always so much to pack for two kids, a husband and myself.  Now that my kids are older, and my attitude has shifted getting ready was a breeze.  (My attitude shift simply means I stopped micromanaging every detail and said,  “Pack up your stuff because we are leaving tomorrow.”)  I also put my kids in camp all week.

Even with my easy-going attitude (thank you yoga!) there is still so many things to get in order before you can leave.  First step was getting the kids in a camp all week.  The oldest in babysitting camp, the youngest in Pirate camp.  This allowed me to watch TV and chill  get work done, get the car checked out,  pick up prescriptions, do laundry,  pay bills, go to the library, plan meals, figure out the whole Toby and chickens feeding stuff, pack suitcases, and even squeeze in “me” time.  (I am growing more and more introverted with age and really crave quiet time by myself.  The only way I was able to spend two hours in Barnes and Noble with a Starbucks on Monday is because my kids were in camp all week.)

On Wednesday I took an amazing deep stretch class, then I got my hair highlighted and cut.  Don’t you love how the stylist always makes your hair look so good!?  Why can I never re-create this look?  Plus, I love when my ends are nice and clean.  (Thanks Lisa!)  Don’t you love when your kids are in camp all week?

I did a little purple party in the back here though.  I really want another tattoo, but I am  not totally ready yet, so I figured this purple hair would tame my wild streak.  I was able to spend hours in the salon because my kids are in camp all week.

I love red toes, and haven’t had a bright red polish since Christmas.   This little flag on the ring finger manicure deal I totally stole from a friend. Thanks Angela!  🙂  My mom and I went together, and I even let her have my favorite nail lady— because my kids are in camp all week.

I went through all my Birchbox samples and packed them up for the beach.  I had been hoarding them in a huge basket, so why not put them to good use!?  Packing the rest of my clothes and stuff was super easy since I can only wear my same June Project 12  outfits right now.  I am excited to wear different shorts, bathing suits, dresses, and for heaven’s sake, a cover up.  I enjoyed sorting through the products and my clothes and didn’t feel rushed.  (Because my kids are in camp all week.)

I also spent some time thinking/planning about really staying on track with my eating and exercising while I am at the beach.  Long beach walks are one of my favorites, so that is a no-brainer.  There is a YMCA very close to our place and we get free passes, as well as a little Ashtanga Yoga studio I have been before.  I still feel amazing from my Fat Fast, and my husband has done it all week too.  (He has lost 8 pounds.)  I have increased the protein, but still kept my carb intake at or under 10%.  I continue to lose weight, and I feel amazing–absolutely no UC symptoms!   So, I am planning on making some yummy (keto) meals and snacks.  (I will have ice cream because there is a special place we love to walk to every year.  One scoop, then back on track!)

This face.  He may not agreed with my gleeful attitude about the kids being in camp all week.   I am really sad to leave this little cutie.  (Don’t be shocked, but I’ve cried about it.)   I feel like he knows we are leaving, so he has been extra snuggly and sweet.

But the moral of this story is to put your kids in camp all week.

My son and I play around with song lyrics all the time in the car.  We decided to actually write down the lyrics to this one, perform it, and have my husband record it.  We practiced, then got the video in two takes.  It is not perfect by any means, but it is absolutely hilarious.  We promise…more are coming!

Lift, walk, yoga, and abs.  Move your body and there won’t be flab.
