Road Trip!

My kids and I took a trip to Tennessee last weekend to visit family and to go to the annual ice cream social at their church.  My husband ended up staying in town because of a funeral, so it was just the kids and I.  He was a little worried about me going at it alone, since it was the first time back to Tennessee since my dad’s funeral.  I assured him I would be fine.  And I was fine…for the most part.  It was really hard.  The last few months have been hard with Easter, Father’s Day and then my dad’s birthday last month.  This was the toughest though.  I felt sad and heavy being at his church, and at his house.  I felt really sad for my step-mom, and she had a dream while we were there that I can’t shake.   I really kept thinking he was going to show up any second.

I kept having this flashback of my dad rolling up on his motorcycle in his overalls to the ice cream social last year.  I mean…seriously.  This picture alone makes me cry and giggle all at the same time.

A ton of happy happened too though.  We jammed out the whole car ride there…dancing and singing to music.  My kids and I  finally stopped at one of those scenic outlooks on the way down and got some pictures.  Look at those beautiful mountains and all that greenery!

I got to see my dad and give him a big hug.  After this we went to my Uncle Buck’s grave and then my Grandpa’s.  (Who wouldn’t be emotional?)

Watched my son get dunked!  (and later my Aunt Kathy!)  I have to convince my husband to rig one of these up.  It would be awesome to raise money for church, a charity, even in place of a lemonade stand!

Grief is going to come and go in waves for me…I know this.  The good news is, I have so much happy in my life, and am filled with gratitude for all that I have.  I know my dad is with me always.

August Project 12- #AliveinAugust

It is August…a new month means a new project for me!  My family and I are coming together to feel our very best selves this month.  Presenting….#AliveinAugust.

Everyday I am posting something that makes me feel alive…in mind, body, and spirit.  We are eating clean, drinking tons of water, taking evening walks as a family, getting inverted, praying together, reading, using our brains, opening up communication, and tons more!!!

For myself, I have committed to doing 12 handstands a day.  My husband has joined in on a few of these days but he has his own things that make him feel alive!  🙂  Inversions have tons of benefits…feeling alive is just one of them!

Day One:  Handstand on the border of Tennessee and North Carolina.  Do you know I have never stopped at one of those Scenic Outlooks on the side of the road?  Last weekend, I drove by a few with my kids and told them we were doing it.  And we did!

Day Two:  Swinging with my Brody, and sweet cousin Claire.  After she got off my lap, I had a competition with Brody to see who could swing the highest.  Swinging is very therapeutic and liberating!!!

Day Four:  My daughter and I made plans to go to Laughing Buddha and take my friend Lauren’s class this week.  We decided to play around a little with some acro-yoga!

Day Five:  After a really sweaty class at Y2 Yoga, I finally got a chance to eat in the café.  I ordered the remix salad with salmon on top.  It was amazing!   There is really something about eating healthy that makes you feel alive!

Colman’s Mustard Recipes

I was asked to do a segment on WBTV for Colman’s Mustard for National Mustard Day.  (Yes…it is a thing!)  I was asked to do the segment to promote Colman’s Mustard (which is spicy and awesome), and show that mustard is a healthy condiment and can be used in a variety of ways! Click HERE to watch the link!

The producer sent me powdered and prepared mustard and asked me to come up with a few recipes for the show.

Deviled Eggs:  I have written before about my love affair with deviled eggs.  Using Colman’s prepared mustard gave these a little punch and they were great.  (almost wasabi like, if that makes sense.)  Use the recipe HERE, and just swap the French’s for the Colman’s.

Dry Rub:  This is great for pork, brisket, seafood…even burgers!
Here is the quick mix:
2 TBS each of salt, onion powder, garlic powder, light brown sugar, Colman’s powdered mustard.
1 TB each of cayenne pepper, white pepper, Old Bay, black pepper.
1 tsp each of ginger powder, and cumin.

Bloody Mary:  Sunday Funday anyone?
3 cups of tomato juice
1 cup of pickling liquid
3 TBS Worcestershire
2 TBS Hot sauce
1 cup of vodka (Tito’s please!)
2 tsp Colman’s prepared mustard
2 tsp salt
2 tsp pepper
2 tsp horseradish

Pour the horseradish and the mustard and muddle around a bit, then mix the other ingredients!

Salad Dressing: I love this dressing…no added sugar.  Just a few simple ingredients!
2 TBS red wine vinegar
2 TBS olive oil
1 tsp dill weed
1 tsp salt
1 tsp garlic powder
1 tsp lemon pepper
1 tsp Colman’s powdered mustard

Have you ever tried Colman’s mustard?  I’ll admit…I am hooked now!
