Proposal Roast

Happy Hump Day!
I had to put up a quick blog post for my readers simply to  tell you to go and make this roast.  ASAP.  Go buy the ingredients today and have it for dinner tomorrow.
I call it “Proposal Roast” because the first time I made it, my husband took one bite, pushed his chair away from the table.  He  got down on one knee, asked me to remarry him, never leave him and to make this once a week.  I can’t guarantee a ring single ladies, but I can guarantee that this is easy, delicious, and low carb.

Four things you need:

  • A 2-3 pound chuck roast
  • a packet of powder ranch dressing mix
  • a packet of AuJus Gravy mix
  • one stick of butter

This is it.  Get out that crock pot and put all the stuff in, and leave it alone.  I go low for 8 hours or so.

Ya’ll.  Get a chuck roast.  Don’t get eye of round, rump roast, or any of those other cuts.  Chuck equals luck ladies.  And stop being scared of butter.  Put the whole stick in your roast,  top your veggies with it, and mix it in your coffee.

Back to dinner.
Never mind.  You are done.  BAM!  Go to work, go to yoga, go get a mani, or go to Target by yourself.  Read a book, go to lunch, take a nap.
I make this once a week and the re-proposals keep coming.  Do you think I have to do any dishes after this?  Have you seen my new boots?  Going out with the girls?  Yep.  You get the idea.

We usually have ours with some type of veggie, and I heard it is great on sandwiches.  I am working towards Vegas abs,  so no bread for me.  But this roast with some steamed broccoli, mashed cauliflower or a side salad is so satisfying.

Weekend Recap

What a weekend!  I know the Panthers did not win the Super Bowl, but we had such a great season.  All of the excitement behind this has the vibration in Charlotte pretty high, and I hope this doesn’t damper it.

Here is a recap of our weekend!

Friday night we were all exhausted from a week of work and school.   I immediately poured some wine when I walked in the door and started dinner prepping.   Lucky for me,  my hubby called and said he was on his way with pizza!  I just kept drinking the wine, peeled the carrots and sliced the apples for the sides.  My daughter snagged a babysitting job, so I dropped her off while the boys started the Avengers movie.

Saturday morning, I taught my class at Charlotte Yoga.  What a class!  There are times…like Saturday morning, when I know I am doing exactly what I am supposed to do.  I felt completely in my element.  I love when I leave a class knowing that I inspired my students to be more than they even thought possible.

IMG_1021This girl went on a date.  Her second one.   Yes.  She is only 12 years old.  Her boyfriend is a sweetheart and his mom is pretty cool too.  (I became friends with her after stalking his family on FB and IG)  A little background… Kadyn and her boyfriend had their first date at the Y a few weeks ago.  They played soccer and basketball.  I was totally fine with this…until she asked if they could go to the mall this weekend.  Deep breaths and long talks later…my hubby and I agreed.   AHHHH!  When did my baby girl grow up?

I know she isn’t grown up by any means, but I do trust that she will make good decisions based on what we have taught her.  I feel really confident that my husband and I have done a good job showing and leading her to do the right thing.

I had a Plexus event in the afternoon with one of my teammates.  Afterwards, I came home and took my Toby on a long walk in the sunshine.  Gotta love Charlotte weather!

After our walk, I made a quick kale/romaine caeser mix.  I have been really into this lately…I just add a different protein.  We’ve had blackened chicken, shrimp, sliced beef, and even boiled eggs on top.

After dinner, my hubby and I headed to an event at the new Charlotte Yoga studio.  The Park Road location will still be open, but the new studio opens next weekend!  I will be teaching at the new location on Wednesday’s 12-12:50pm.  I am so excited to be a part of such an awesome beginning.  The entire floor is now filled with people’s written intentions.  It was very inspiring to walk around in the candlelight and see what friends and fellow yogis wrote.

We got up early Sunday and headed to church, where my daughter participated in youth Sunday.  Always one of my favorite sermons…even more so because she was in it!

I headed to the Y after church to work out and teach a class, then on to a friend’s house for some pre-game fun .   Kadyn made her deviled eggs, and I brought a bottle of champagne to get the afternoon started.

My hubby stopped by the 704 pop up shop Friday and got our family four some cute new tees.  But he was so anxious about the game and wanted to watch it in the comfort of our home.  We left our friends house before kick off and make it home just in time for the coin toss!

Mini Quiches

I had to share the recipe for these crustless mini quiches with you.  They are so easy to make, and taste delicious.

Ingredients:

  • 12 eggs (I used my fresh eggs from my own chickens, but that isn’t necessary!)
  • Sharp cheddar
  • Baby bud broccoli florets
  • Turkey sausage crumbles

Preheat oven to 350 degrees. Place frozen broccoli (the whole bag!) in a glass dish and microwave for 5 minutes on high.

Since it annoys my hubby, I  use a lot of dishes when I cook.  🙂  So, I transferred the cooked broccoli to a new bowl, and cracked all 12 eggs in the glass bowl.   Whisk away.

Spray 2 muffin tins with non stick spray.  Add 2 tablespoons of sausage crumbles, then cooked broccoli on top of that.

Next, add 2 tablespoons of egg mix to each muffin cup.

Add a sprinkle of sharp cheddar to the top.  Place in oven and bake for about 20 minutes.

Enjoy!  We had these for dinner with raw veggies and fresh fruit.  And have enough for leftovers for snacks and lunch this week!
