Bacon Wrapped Meatloaf

Holy Moly.  This recipe took me from wife of the year, to wife of the freaking decade.  I am wondering what I need to wrap in bacon to become wife of the century?

Bacon Wrapped Meatloaf

Ingredients:

  • 1 pound of ground beef
  • 14-18 pieces of bacon-I used center cut, but wished I hadn’t, since the regular sliced is longer
  • 1 cup of almond meal
  • 1 cup of sharp cheddar cheese
  • 1 egg
  • 1 tsp Worcestershire sauce
  • squirt of Dijon mustard.  (the recipe called for mustard powder, so I had to improvise)
  • salt and pepper

Step One:  Weave the bacon.

Step Two:  Place the meatloaf pan upside down on top of the bacon weave, then flip it.

Step Three:  Mix all the other ingredients, except the cheese.  (you could add peppers, mushrooms, or diced celery to this)  Yes, I realize there are two flecks of cheese in the bowl.  I was really excited and didn’t read the directions.

Step Four:  Put the meatloaf mix in the bacon weave topped loaf pan.  I layered my meat and the cheese, and it was awesome, so do it that way.  Fold the bacon over, so it covers the meat/cheese mix.  I put and extra strip down the middle so it looked pretty.

Step Five:  Wrap it in foil and stick it in the fridge for 30 minutes.  I put this picture in here because people always want to know what is in your fridge.  Water, Organic Milk, whipping cream, eggs, cucumbers, protein shakes, pre-portioned veggies and dip, pimento cheese, cherries, and cans of sparkling water.

Step Six:  Preheat the oven to 300 degrees.  Take the meatloaf out of the fridge, remove the foil, and flip it onto a broiler pan.  Cook for 1 hour.  After an hour, crank the oven up to 350 degrees, and cook for 10 more minutes.

Step Seven:  Take it out of the oven, and let it sit for about 10 minutes before you slice it.  Then devour it!  I know this is not the prettiest looking thing, but trust me…it is delicious!  I will perfect my weaving skills in future recipes!

      1. OMG! SO good! I’m so glad I shook the lazy off and found my pan (took 15 min. of pulling pans out of pan purgatory in the very back of cabinet )that has the bottom that makes the meat sit above the drainage channels…would’ve been grease heaven! Thank you for sharing the recipe… 5 out of 7 of us loved it and that is unheard of in our house! ❤
