I am home with a sick little one today, so my plans to meet my husband for lunch had to be put on the back burner. I’m sad to postpone our date that we planned over a month ago, but secretly happy because I’ve been dreaming about this lunch for a couple days now. This was so easy to make, and since I have 3 more avocados, and lots of leftover salsa chicken, I get to have it again this weekend.
Here is what you need: an avocado, leftover Salsa Chicken, and some shredded cheese.
Set the oven to broil. Slice one avocado, and scoop out the pit. (Then, scoop out some of the flesh and eat it. You got to make sure it’s ripe!) Warm up the leftover chicken and fill the holes in the avocado.
Sprinkle with cheese.
Broil on high for about 5 minutes.
