A Day at the Spa!

My husband and I recently celebrated 15 years of marriage!

Our anniversary is on Dec 23rd, and although I loved our wedding and everything about it, finding time during Christmas season is always hard.

He was sweet enough to have this gorgeous bouquet waiting for me when I woke up that morning.   But then came the hustle and bustle of church and company and cooking.   So I decided to surprise my hard working man with a treat after the craziness settled down.

I knew we would get home right at dinner time, so before we left I made a huge pot of chili.  I like to keep my chili low carb, so I added lots of beef and sausage.  Then just added 1 can of beans, onions and diced tomatoes.

I kept the secret of where we were going for over a week…that is a big deal!  But my hubby loves surprises and his love language is quality time, (well, and physical touch!) so I kept my mouth shut.

I told him to wear workout clothes, but to pack a bag with a bathing suit, and a comfy outfit to come home in.   And I told him to make sure his underwear was in good shape.  Ha ha!  He guessed  we were doing a sexy photo shoot, or going to Ray’s  Splash Planet.  (Um, No.)

We ended up at the Ballantyne Hotel and Lodge.  They have a wonderful spa there with so many amenities.  The cool thing is, when you book a service, you can hang out all day long.  and that is exactly what we did.

I did insist on us getting a good workout in before we lounged and got pampered.  Only because it puts us both in such a good mood.  We did 40 minutes on the elliptical, and then some free weights.

After our workout, we changed into our suits and relaxed by the pool.  We drank a glass of wine, read and enjoyed the beautiful scenery.

This picture sums up how relaxed we felt after our couples massage.  We had an add on, and we both went for the deep tissue.  I needed that!  I’ve amped up my workouts a bit so I had some pretty tight knots in my upper back and hamstrings.

After our massages, we relaxed some more by the pool and enjoyed the steam room and the sauna.  And lots of cucumber water.

Pedicures came next…It is hard to see how beautiful this view is.  It was a pretty gloomy day in Charlotte, so this picture doesn’t do it justice.    I can’t wait to come back on a gorgeous, sunny day.  I am thinking about treating my sister to a spa day when she hits her next promotion!

The finished product!  I got a cute puple color…he just got a buff and loved rocking those spa sandals.  🙂

And that is a rap!  We felt all glowy and  shiny when we left.

This is something my husband would never do for himself, but really deserves it.  He is a really hard worker and does so much for me, my kids, and everyone else in his circle.  He enjoyed it and it was so nice to get a way for several hours.

A wise person once gave me the secret to a happy marriage

“Once a week-Once a month-Once a year.”

Once a week go on a date.  This doesn’t have to be a fancy dinner, or expensive night on the town.  My husband and I go for a walk, yoga, or simply kick the kids out for an hour so we can connect over bagged salads at our kitchen table.  Once a month is when you are supposed to get away…even if it is to a hotel in the same city!   (Sending the kids away counts too!) The once a year is taking a vacation together…alone.  (That is one we are working on now!)

Dinner for Twelve-Corkbuzz

Hope everyone had an amazing weekend!

Just wanted to pop in and tell you about my experience at Corkbuzz.  This was my third restaurant that I am featuring in the Dinner for Twelve series for the blog!

Corkbuzz is located in the Southpark area and is known for their extensive selection of wines.  They offer classes where you can learn more about types, how to pair with food and just simply taste the wines.

I invited one of my favorite wine-loving friends and her boyfriend to join Daniel and I.  We made sure to take our Plexus Block before indulging in all the wine!

The place settings are clean and simple.

We started out with a pinot noir.  This particular one was from a winery in Oregon, called Runaway Red.  There is an awesome story that goes along with this.  But, you’ll have to go in yourself to hear it!  Seriously, that is one thing I loved about Corkbuzz.  The staff told these amazing stories about every wine.

One thing on the menu that I loved were these flights.  Three 3 oz glasses of a category of wine.  My friend and I split the New World Pinot Noir and the 2015 selection of Rose.

Appetizers were served and no picture was taken.  We got the brussell sprouts, which had fennel, marcona almonds, and cheese curds.  The other couple ordered the grilled octopus, which had herb dumplings, bacon, macadamia nuts, and whipped feta.

Both phenomenal.

IMG_4438This is going to sound strange, but during the week, when I mentioned I was going to Corkbuzz, THREE separate people told me to get the burger.  I knew my hubby was going to be happy!  He is a beer and burger man for sure.  It is a bourguignon burger with red wine fondue, bacon-mushroom relish, and served with french fries.  Of course I had a bite and it absolutely melted in my mouth!

IMG_4439 My friend ordered the crab linguine (Which they did with gluten-free pasta for her!)  The Linguine dish had a ton of crab, english peas, castelvetrano olives, garlic confit, and farmer’s cheese.  Her boyfriend got the pork tenderloin which was cilantro rubbed, served with goat cheese potatoes, grilled romaine, and topped with blueberry jam.

I got the corvina sea bass which had artichokes, roasted brussels sprouts, and a charcuterie sauce.

Perks of being a blogger…we got dessert cocktails on the house.  This also has a great story behind it.  And it was very delicious too!

Will I go again?

Absolutely!

I love the flights…I want to try them all!  Plus, I gotta go back for those brussell sprouts.  🙂

Why I took a month off from blogging

I haven’t sat down to write a blog post in over a month.  I didn’t even update my teaching schedule.

Why?

Lots of reasons that make lots of sense and others don’t make much sense at all.  Like…. I don’t know, I’ve been busy, I would rather read,  I don’t have anything to say, I have too much to say, my kids need me, my husband needs me, It is not income producing for me, I don’t want to, it takes to long to upload pictures, my computer is slow,  people don’t care what I have to say, I don’t have time, I’m not a good writer, I want to enjoy life and not take a picture of everything I do and then write a novel about it.

So, that is what has been going on.

I went to Nashville with my girlfriends.

I went to Vegas for the annual Plexus Convention.

Then I went to  Nags Head with my family.

I am working hard and I feel spoiled all at the same time.  I am eating clean (90/10) and exercising.  I am taking care of my skin with quality products, monthly facials, and by wearing sunscreen.  I bought myself a fancy purse and wallet because I deserve it and I am worth it.  I am planning a winter get away for my family in December…somewhere tropical.  I am reading books and listening to podcasts that light fires under my butt daily.  I surround myself with people that challenge, support and believe in me.  I set goals and announce them proudly.  And then just change the date if the timing wasn’t quite right.

I am deliriously happy.  I am unbelieveably healthy.  (I forget I even have UC on most days!) My husband is a dream for the most part and the kids are pretty awesome too.  I love teaching yoga, working my plexus business, and having my energy clients.  I cry multiple times a week in gratitude.

I have lunch, coffee, dinner and wine dates often.  I love how full my social calendar is.  And, it’s on my terms.  I pick and choose what I need.  I also carve out my own time.  I need quiet, “Kacy” time and I love that I have the freedom to do that.

I’ve tried a few recipes I would like to share soon.  I have been reading some books that I want to tell you about.  I plan to finish my #37in37 list.  I still have a lot of restaurants on my #dinnerfortwelve list to review.

So, stick by me if you can.  I don’t know where I am going with this…I am not ready to give it up quite yet.  Just not ready to put my life on hold and put in the time it takes to post blogs multiple times a week.
