May Favorites

It has been a while since I posted about some of my favorites….Here are 7 things I’m digging right now…


  1.  Dill pickle cashews.  I snagged these from Target.  I am very thankful they come portioned out…they are that good!


2.  Hot pink nails.  I love bright cheery colors this time of year.


3.  Stuffed avocado from Viva Chicken.  I sub the quinoa for feta.  because feta makes it betta.


4.  Plexus body cream.  This stuff is amazing! It has spirulina algae and activated charcoal, so I use it on my body as an all over lotion.  I can see the sun spots on my legs and arms starting to lighten up!  Here is the best part…I started putting a drop in my hair before I blow dry it.  I don’t even have to use a straightener, it leaves my hair so soft without being weighted down.


5.  I totally stole this “cereal” idea from Low Carb Traveler, one of the blogs I read.  I switched it up just a bit though.  I use a 1/2 cup of pecans, a 1/2 cup of  cottage cheese and 1/4 cup of blueberries.  This power breakfast can carry me to lunch, through my own workout, and teaching classes all morning!


6.  Boost Lip Balm.  Totally in love with this….It came in my Birchbox and I will be ordering again very soon!  It gives your lips lots of shine and just a hint of color.  IMG_2746

7.  Vanilla seltzer water.  Yummmmmmmm.  This is my new “dessert” every night.  This same brand makes an orange vanilla that tastes like a dreamsicle.

Tunnel to Towers


My husband and I are so excited…and nervous to participate in the Tunnel to Towers Stair climb.  I planned to participate in the  the Crohn’s and Colitis walk as one of my #37in37 items, but there isn’t one local, so this will take it’s place.

What is this about?  The Siller Family started the foundation to honor the memory of their brother, Stephen, a New York City firefighter, who lost his life on September 11, 2001 after strapping on his gear and running through the Brooklyn Battery Tunnel to the Twin Towers.

The goal of the Stephen Siller Tunnel to Towers Foundation is to continue Stephen’s legacy by supporting our nation’s first responders and service members.  In January 2015, the Foundation also raised over one million dollars to fully pay off the mortgages for the families of slain NYPD Officers Wenjian Liu and Luis Ramos.


Why are we doing this?

Well, my husband and I have a little extra income rolling in (thanks Plexus!) and we want to give back…with our time and finances!  And because my friend Suzanne asked me to.  She is such a beautiful person and I admire her so much.

Here is a little about Suzanne…She is is currently ranked in the top 15 female tower runners, and 2nd in her age group in the U.S. Suzanne was named the Most Moving Instructor by Class Pass in 2016.

Suzanne and her husband are the race directors for the Duke Energy Stairclimb benefiting the Stephen Siller Foundation. The Tower Climb event is in Charlotte on April 30, 2016 at Duke Energy.


Last year was the first Tower Climb event at the  new One World Trade building with 1000 participants consisting of firefighters, veterans, elite climbers and family of many first responders.  Suzanne and Joe were so motivated by the event, they wanted to bring it to Charlotte and share in honoring their local first responders.

The foundation builds smart homes for veterans.  They are currently working on 15 homes this year and are working on 46 homes total. These homes are customized to suit the needs of the most catastrophically injured servicemen.

Baked Italian Spaghetti Squash Boats

Last winter, I was really into making zucchini boats.  I made them with a Mexican flair, and Italian flair, and even stuffed them with pimento cheese.

This is the winter for spaghetti squash boats!  I can’t wait to play around with some new recipes.



  •  spaghetti squash
  • 1 pound ground chicken breast
  • can of marinara sauce
  • shredded mozzerella


Step One:  Bake squash.  I poke a few holes in mine and bake them whole for about an hour at 400 degrees.

Step Two:  Brown chicken breast, and add sauce.


Step Three:  Cut the squash in half, and start to “shred” it…but leave it in the boat!


Step Four:  Add the sauce to the boats, mixing it around so it gets into the bottom.  (go ahead and pour a glass of wine!)


Step Five:  Sprinkle cheese on top, and add a pinch of Italian seasoning on top.


Step Six:  Bake around 15 minutes, or until cheese is melted.   (I like my cheese really toasty, so I broiled mine for 5 minutes at the end.)


Step Seven:  Devour!
