I had to share the recipe for these crustless mini quiches with you. They are so easy to make, and taste delicious.

- 12 eggs (I used my fresh eggs from my own chickens, but that isn’t necessary!)
- Sharp cheddar
- Baby bud broccoli florets
- Turkey sausage crumbles
Preheat oven to 350 degrees. Place frozen broccoli (the whole bag!) in a glass dish and microwave for 5 minutes on high.
Since it annoys my hubby, I use a lot of dishes when I cook. 🙂 So, I transferred the cooked broccoli to a new bowl, and cracked all 12 eggs in the glass bowl. Whisk away.
Spray 2 muffin tins with non stick spray. Add 2 tablespoons of sausage crumbles, then cooked broccoli on top of that.
Next, add 2 tablespoons of egg mix to each muffin cup.
Add a sprinkle of sharp cheddar to the top. Place in oven and bake for about 20 minutes.
Enjoy! We had these for dinner with raw veggies and fresh fruit. And have enough for leftovers for snacks and lunch this week!
