Pizza. I love it. It is one of those foods I would take with me if I were ever deserted on an island. And an oven to heat it up with. And some coffee, Diet coke, and probably ranch dressing. And all the foods you don’t need to buy if you are a binge eater. Don’t even get me started on the beauty products.
The cheese and gooey toppings are always the best, so I am fine with throwing the crust away for the most part. But sometimes, I just really want to bite into a piece of pizza like a normal person does!
I found a couple keto pizza recipes and tweaked them to come up with this:
- 6oz of cream cheese, softened
- 6 eggs
- 1/3 cup of whipping cream
- 1/4 cup of parmesan cheese
- 1 teaspoon of chives
- 1 teaspoon of garlic
- 2 cups of mozzarella cheese
- 1/4 cup of pesto
- pizza toppings. (I used pepperoni)
Preheat oven to 375 degrees. Spray a 9×13 pan with cooking spray and sprinkle 1 cup of mozzarella cheese in the pan. Bake for 5 minutes. (Someone in my house opened the mozzarella and used it even though they knew I was trying this recipe. I sent a snarky text and added some cheddar. It was delicious, and I apologized.)
In a bowl, combine the cream cheese, parmesan, Italian seasonings, eggs, chives, and cream. Beat until mixed and pour over the cheese in the pan. Bake for 30-35 minutes.
Viola! It comes out like a really thick pizza crust!
Spread “crust” with pesto.
Add 1 cup of mozzarella cheese, and any other toppings you would like!
