I have been trying to eat clean this week…lots of veggies, protein, and healthy fats. Eating clean can mean whole grains for some, but not me. I am avoiding wheat after a little stomach episode. And I feel amazing, light, and full of energy. I have slept better and feel all glowy too. Here are two easy things I have made this week I wanted to share. If you have visited my Recipe page on my site, you know I don’t list ingredients, or actual directions. Ain’t nobody got time for that.
Slice zucchinis. Put a little tomato sauce on each zucchini, then a little shredded mozzarella, then a turkey pepperoni. Broil about 10 minutes. Oh, and spray the pan with some PAM. (I saw this done with eggplant and parmesan too)
(the ones in the picture on the left I tried to make all fancy with basil and fresh mozz balls. The mozz balls melted all over…I should have taken an after picture. Stick to the pepperoni ones!)
Basil, Fresh mozzarella, tomatoes, olive oil, balsamic vinegar. I added avocado too.
Cut avocado in half, remove pit. Crack an egg in each hole. Bake at 400 degrees for about 15 minutes. Remove from oven and cover with diced tomatoes/red onions. (I stole this yummy recipe from Revolution Pizza and Ale House in NoDa)
