Salmon Patties

I used to love when my mom made salmon patties as a kid.  It was a recipe I couldn’t wait to learn how to make and serve my own family.    I have been craving these lately, so I thought I would try to give them a whirl…low carb style.


Just like all my recipes, I tried to keep the ingredients to a minimum.  Here’s what you need:
1 egg
1 ounce pork rinds (these are taking the place of bread crumbs/mashed crackers)
2 tablespoons of olive oil
2 tablespoons of Dijonnaise
2 5-ounce pouches of Pink Salmon.

Heat the olive oil in a large pan.  Dump everything else in a bowl.


Mix together well, and form into 4 patties.  Place the patties in the oil and let cook 2-3 minutes on each side.


Unfortunately, this is what mine turned out like.  I was in a really big hurry cooking this last night.  I was leaving this meal for my husband, and I was going to eat later.

I should have put the patties in the fridge for a few minutes, and used a spatula to flip them.   Instead I used a baby spoon because that wall all that was clean and then I cried when this happened.


Who likes admitting when they fail?  Not me.  But, remember this month I am stepping out of what is comfortable.  I wasn’t going to post this.  Because it looks like crap, and who post the recipes when they are a disaster?
I do.  Me.  I am human.  I rush around and do rambunctious things.  I make mistakes, and learn to laugh at them.

Lucky for me,  I made a mini Squash Casserole earlier in the day.  (the saving grace of dinner.)
Lucky for me my husband is a good sport and ate the salmon  crumbles.  I ate them when I got home too.  (I was out gallivanting around Charlotte getting even more out of my comfort zone.)  These crumbles were awesome!

I just gotta slow down.
