Smoked Sausage and Cauliflower Rice

My husband says this is the best thing we have ever concocted.  It was definitely really good and soooo easy.

I know I have said it before, but I love using cauliflower.  It is so versatile…it can be a potato substitute, a rice substitute, a pizza crust, or just plain old yummy cauliflower!



  • 2 -1lb bags of frozen cauliflower
  • 1 package (3 lbs) of Hot smoked sausage
  • 1 egg
  • 1 onion
  • lots of cheese  (probably around 3 cups)


Directions:  Place frozen cauliflower in a microwave bowl and cook about 5 minutes.  Drain and let sit for a few minutes.  Using your food processor…which we know around here means my husband has to help.  I swear, you would think I was getting out a power drill, or a nail gun.  Anyway, you or your (wo)man can “rice” the cauliflower.   The other person can cook the onion and sausage.  (By the way, this meal can TOTALLY be made by one person.  It was getting out the almighty food processor that did me in.  And you can just use a cheese grater to “rice” the cauliflower.)


Mash the cauliflower rice with a cup of cheese.


Add the sausage/onion mix to the cheesy rice, plus the egg and mix all together.  Put in a casserole dish and top with the rest of the cheese and bake at 350 for 30 minutes.


This made 6 serving of pure deliciousness.  It was dinner one night, then an even better lunch the next day.  I have no idea how many calories, carbs, or even if children were hurt in the making of this.  I am just trying to eat normal portions of real foods that don’t have wheat or sugar.  (Because I can get carb-anal and scale-whorish.)

And my children only suffered because they didn’t eat it.  My husband and I didn’t really push it though— we wanted to have it all to ourselves.

  1. OMGeee yes yes yes!! Cauliflower is my SUPERFOOD. There is so much I do with it. Rice, pizza crust, cheese sticks, alfredo sauce, creamy base for tuna bake, warm dip for veg, mashed “potatoes”, the main ingredient for a veggie curry, the list could go on and on. Can’t wait for it to be winter here so the price goes back down!!!!

    1. Cheese sticks? Diane…you have to share the recipe! I usually always use fresh cauliflower too…but it was so expensive here too.
