Staying on Track!

It has been two weeks of really staying on track with my eating/exercising plan.  I re-adopted the 90/10 rule that I have followed in the past when my weight was at a healthy level, and my UC was in remission.  I have lost almost 7 pounds (6.8), but most important…I feel really great.  However,  I am currently back on the highest dose of Asacol HD, and also back on those super sexy suppositories. I cannot complain though,  the side effects are minimal and I have not had serious UC symptoms in over a week!  I have been walking almost every day for about 45 minutes and taking yoga about 4 days a week.


IMG_6028Looks can be deceiving.  This is soooo good.  1/2 cup of cottage cheese, grape tomatoes, and 1/4 cup of sunflower seeds.   And lots of pepper.  Love this.  Breakfast and lunch fantastic-ness last week for only about 260 calories and about 17 grams of protein.


I love almond butter…I get this at Healthy Home Market.  I enjoy going here because you can grind your own nut butters.  No added salt, oil, or sugar.  Ingredients:  Almonds.  I have been spreading 2 tablespoons on a giant piece of celery for a snack.   When I ran out of celery, I just ate it straight off the spoon!


Dinner at Cowfish.  This is the Two-Time roll, one of my absolute favorites.  Thin slices of cucumber rolled around yellowfin tuna, avocado, kani, asparagus. Topped with blackened tuna with spicy tobiko.   No carby rice for me!


This is where that awesome 10% comes in.  It was my daughter’s (early) birthday celebration and we ordered chocolate mousse.  It was huge and chocolately and awesome.  I had 3 giant spoonfuls.  🙂


Lunch at Village Tavern with friends.   I have been craving a burger and this hit the spot!  Burger (sans bun,  of course) topped with pimento cheese, bacon and onions.  Instead of greasy, carb-loaded fries, I ordered sautéed spinach instead.  Delish!
