I finally got a zucchini spiral slicer to make zoodles.  You know I am crazy about zucchini…I love it!   It is green, easy to sneak into recipes for my kids, low carb, and very versatile.


Here they are….in all their glory!  I ended up zoodling only 2 zucchinis because they filled up this giant bowl!  I salted them and let  the zoodles sit for 20 minutes.  After that, I carefully wrung out the zoodles to get all the water out.


This is what was left…2 zucchinis only made this much!  Just goes to show you how much water is in zucchinis.  I think next time I may zoodle the zucchini and stir fry in olive or coconut oil.


Yum.. I served my zoodles in a lemon butter sauce.  (2 tablespoons of butter, 2 tablespoons of lemon juice, 1 teaspoon of Worcestershire sauce.)  We had broiled salmon on top and this made a delicious dinner!
